Dumb question, but I can't find the answer. Should I be checking my oil stone cold? Or should I run it for a few minutes. - then check.

Doesn't matter. Just let it sit for a couple minutes for all of it to drain back to the pan.
Also check it soon after changing the oil so you know how full 'full' really is.
