Something else weird just happened. After trying to dial in the carb, went to shut off the truck and it would not stop. I turned the key on and off then to acc. and back again. I did this several times, and started dinking with the back of the switch thinking something may have caught. No luck. I went against all good sense and twisted the key over to engage the starter again. It made the normal loud grind and I immediatly let go and turned it off. Its like something was caught in there. It turned off normally after doing that. You think its a switch issue or a starter issue? I hope I am not hijacking this forum, but I have a month off and want to fix everything! Unemployment never felt so good!

So could I have just as easily just lifted the hood and tapped the relay. Hitting that start while it is running rubs me the wrong way. Like nails on a chalkboard.
I will attack that relay if it is in stock.....

You said this occured "After trying to dial in the carb" did you adjust your idle speed? if so and you set it too high your motor might have been "dieseling" after you tried to shut it down.

Sounds like a flaky switch.. The starter and starter relay have nothing to do
with cutting off the ignition. I bet the lock/switch's innerds are starting to fall
apart and were sticking in the on position. That it ground the flywheel
when you turned it to start tells me those parts are ok..
Course, I'm assuming you are talking about just killing the ignition,
and the starter is not stuck in the start mode grinding away the
whole time.
Doesn't seem to be the case as you describe it.

Starter Solenoid is bad.
The wire that feeds the ignition a straight 12v, at the solenoid, during cranking is not powering down after the truck starts.
Turn off the ignition key and the ignition still has power from this wire.
Next time it happens, disconnect the "I" terminal on the solenoid and the engine will shut off.
Cheap and easy fix to replace this part.

If the solenoid was stuck the starter would have been engaged the whole time, it wouldn't have made a noise when you turned the key to "start"

The easiest way to shut it off is to pull off the coil wire.
