Well, once again it has been proved that even a less-than-trained monkey can work on a 2100.
The carb all went back together fine, the truck does run and only has 1 leak from the fuel-line-to-carb fitting since I didn't tighen it enough.
So, how do I adjust the carb to get the truck to run perfect? I see that I have mixture screws on the front and the throttle stop on the side to mess with. How should I go about tuning it? It seems to be running a little rich right now.

With the engine off, run the idle mixture screws all the way in (lightly) until they bottom out, and then back each out 1-1/2 to 2 turns. That will get you close enough to start the truck and fine-tune. Then follow the instructions in the Shop Manual. If you don't have one, to to the following link and read the last two pages (11 & 12):
