If I was going to rebuild the front end of my truck this summer, what would be the parts list for "do it while you're there," assuming no unusual damage, just general worn out stuff? I have a ton of slop in the steering and the shocks and springs are shot. So far I can see:
* Springs
* Shocks
* Tie Rod ends
* kingpins (?)
* Brake pads
* Maybe new disks (or resurface old ones)
* New flex lines to the calipers
* Wheel bearings (?)
* Bushings
What am I overlooking in my unfamiliarity with the twin I-beam setup?

I'd say you've got it covered.
Some notes:
1) Get the kingpin sets with bronze bushings, not the nylon versions. The nylon ones are easier to install, but won't last long. The bronze bushings will outlast the rest of the truck, as long as they're regularly greased.
2) PST has front-end kits with either regular rubber bushings or polygraphite. Their kits include kingpins, all steering linkage, and the bushings. Their kits have good-quality pieces and a good price.

I would also replace the rag joint and check the bearings in the steerring column.
Perhaps have the steering box rebuilt as well.

2wd's had rag joints.
4wd's had u-joints.
Manual and power both had them as far as I am aware. I have power steering and it has a rag joint.
